Now that spring is finally here 🙌🏾💃🏾, it’s time to start transitioning from heavier, comforting food to lighter dishes right?
You can of course eat pasta year round, but it’s always first on my list when it comes to ‘light’ food.
Today I’ve made tagliatelle with spinach, black beans and tomatoes. It is fibre-rich, protein-rich, iron-rich and most importantly, extremely simple to make.
