Over here celebrating Meatless Monday with this loaded KALE CASHEW PESTO PASTA! Vegan and gluten free! Happy Monday loves! Hope you all had a great weekend. I am getting back to routine today after a very low key couple of weeks. To be honest, not feeling so hot today so working at a slower pace. But, made this tasty pasta for lunch with my leftover pesto from yesterday. How’s everyone doing?



Deets: chickpea pasta tossed with steamed kale, roasted tomatoes, avocado and vegan Parmesan. Pesto: 3 cups baby kale, 1 cup basil, 2 tablespoons lemon, 1/2 cup cashews, 1 clove garlic, 1/4 cup olive oil, 1/4 teaspoon red pepper flakes, 1/2 teaspoon salt. Process in food processor until smooth-ish. •
