PALEO SAVORY THYME SWEET POTATO “BUTTERMILK” BISCUITS! Who loved those Pillsbury biscuits as a kid? To be honest, my mom never bought them but when I was at friends houses I used to be envious that their parents did ? well these babies are super easy to make, and the texture is amazing. I was a little intimidated to make biscuits but the process was actually quite easy. I made an egg sandwich the other day with one of them and it was BOMB. I used @ottos_cassava_flour for these, which I love because it works very much like white flour. Happy Friday loves! Who else loves dinner biscuits?



Deets: recipe: 1 1/2 cup plus 2 tbls Otto’s Naturals – Cassava flour, 1 tbls baking powder, 1.5 tsp salt, 1/2 cup almond milk, 1 tbls lemon juice, 3 eggs, 1 tbls applesauce, 3/4 cup cooked mashed sweet potato, 2 tsp fresh thyme, 2 tbls melted coconut oil. •
Preheat oven to 425.
Add all dry ingredients to a bowl and mix together. Add the almond milk and lemon juice to a cup and allow to sit for 5 minutes. In a separate bowl, add eggs, applesauce, sweet potato, coconut oil and thyme. Gently mix together with a fork. Add the dry ingredients to the wet ingredients, including the almond milk mixture, to a stand mixer (or use a hand mixer). Mix until it is a thick and slightly sticky dough. Turn the dough onto a well floured surface. Press it down into a flat circle about 1 inch thick. Flour the edges of a biscuit cutter or a drinking glass and cut out biscuit shapes. (Repeat with scraps). Bake on a parchment lined baking sheet for 17 minutes until golden brown on top. #sponsored
