Pseudograins like amaranth, buckwheat, quinoa and teff are more nutritious than other grains like rice, barley, and bulgur wheat.

Having said that, you can increase the nutritional content of other grains by soaking and sprouting them before eating. It dramatically increases their phytochemical and lysine content and reduces compounds that prevent nutrient absorption.
