QUESADILLA LOVE: SPANAKOPITA “SPINACH PIE,” PIZZA or CUMIN BLACK BEAN AND AVOCADO? All can be made DAIRY FREE and all three would make a wonderful holiday appetizer. Just one piece of advice: always have a dip ? Recipes for all three dips below and I posted all three quesadilla recipes in my stories today. Happy Thursday loves. 1️⃣ Spinach Pie quesadilla with Creamy Dill Ketchup: 2 tablespoons Greek yogurt (dairy free or regular), 2 tablespoons organic ketchup, a squeeze of lemon, salt/pepper to taste, fresh chopped dill).
2️⃣ Pizza Quesadillas with Avocado Yogurt Ranch: 1/2 cup dairy free yogurt (or any plain unsweetened yogurt), 1 ripe avocado, 1.5 tsp dill seed, 2 tbls chopped fresh parsley, 1/2 tsp salt, 1/2 teaspoon pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder. Blend together until smooth!
3️⃣ Avocado, Cheese and Cumin Black Bean with Chipotle Mango sauce: 1/2 ripe mango blended with 1-2 tablespoons of @sietefoods chipotle sauce (or any hot sauce of your choice). •
