Rainy Friday Vibes: Craving Chipotle Since Breakfast
Rainy Fridayzzzzzz….There is something about chipotle that always gets me excited, especially on a gloomy day like today. I have been craving a delicious Mexican bowl since breakfast, and let’s be real, chipotle is always on my mind! After two hours of daydreaming about it, I finally made my Mexican salad bowl a reality and I am beyond satisfied right now.
My bowl is filled with fresh ingredients like @iloveorganicgirl arugula, roasted mini peppers (my current obsession), red onion, tomatoes, avocado, roasted mushrooms, cucumber, roasted oregano chicken, and a bit of my leftover grain-free tabbouleh from the 4th of July celebration. If you missed the tabbouleh recipe, it’s a few posts back for you to check out. To add some extra flavor, I topped it all off with cilantro and a chipotle yogurt sauce made with @foragerproject cashew milk yogurt, coconut aminos, and @heatandflavor chipotle sauce. This combination turned out to be absolutely amazing.
