Ready for Flapjack Friday? This whirlwind week has been challenging!
Flapjack Friday is finally here and I am so ready for it! This week has been a rollercoaster of emotions, with its fair share of challenges, but also some really great moments. One exciting update in my life: I’m moving! It may just be down the road, but I am beyond thrilled. The new apartment is everything I could have asked for – spacious, clean, close to the beach, and even has a dishwasher! Plus, I’ll finally have my own office space, which I am so looking forward to. Good things are definitely on the horizon ❤️
Today is going to be a busy day for me, as I have a 12-person dinner party to prep for tomorrow night that I will be cooking for. So let’s tackle this Friday head-on! On the menu for breakfast – my delicious paleo banana bread waffles (recipe can be found on my blog or below) topped with @so_delicious coconut milk yogurt, blueberry jam made with @sportsresearch beef gelatin and organic blueberries, and @onceagainnutbutter sunflower butter. I’ll also be enjoying some strawberries and @traderjoes wild smoked salmon on the side – the perfect fuel after an early morning bike ride.

Pancakes:
– 1 ripe banana
– 3 tbsp @nutiva coconut flour
– 1 @egglandsbest egg
– 2 egg whites
– 1 tbsp @bobsredmill ground flax seed
– 1/2 tsp cream of tartar
– 1/2 tsp vanilla
– Cinnamon
Blend all the ingredients together and cook on a skillet sprayed with @chosenfoods avocado oil over medium-high heat. Flip once the pancakes are bubbly and the edges are dry. Enjoy this delicious and healthy breakfast treat! ?
