🌱Roasted veggie pasta in peanut sauce🌱Yummy and easy pasta dish. Works with almost any of your favorite roasted veggies and any type of pasta/noodles. 💚Happy Halloween friends 🤗.
🌱Recipe: Blend 1/4 cup peanut or almond butter, 3 tbsp low-sodium tamari, 2 tbsp rice vinegar, 1 tbsp neutral oil, 1 tbsp freshly grated ginger, 1 tbsp sriracha, 1 tsp toasted sesame oil, zest 1/2 lime, juice 1/2 lime, maple syrup to taste. 🌱Cook your favorite pasta according to packet directions. (I used @wholefoods Chickpea pasta.) Slice Brussels sprouts in half lengthwise and toss in olive oil, salt + pepper. Trim carrots, peel and toss in olive oil, salt + pepper. Roast veggies at 400F until slightly browned. Defrost desired amount of shelled edamame. Mix all together with peanut sauce and top with sesame seeds. Serve room temperature.🌱
