🌱Saucy tofu veggie stir-fry🌱 (oil-free option) Happy Weekend🍦
✅Recipe: What you need: ▫️1-14oz block extra-firm tofu, pressed, cut into about 1/2-inch rectangles.▫️4 cups chopped Napa cabbage. ▫️3 medium carrots, julienned. ▫️1 pack udon noodles (about 7oz or to taste), cooked▫️1-1/2 tsp minced ginger. ▫️Sauce ingredients (see below).
✅Season tofu with garlic powder, white pepper and salt. ✅Either: 1) Heat 2 tsp sesame oil in non-stick skillet and sauté tofu until crispy and golden on all sides. Or 2) Toss with 1 tbsp cornstarch and bake at 400F until golden and crispy, about 15-20 minutes. ✅Mix Sauce: 2 tbsp dark soy sauce, 2 tbsp tamari, 1/4 cup rice vinegar, 2 tsp toasted sesame oil (optional), 2 tsp hot sauce, 1 tbsp + 1 tsp maple syrup, 2 tsp minced ginger, 1/2 tsp white pepper, 2 tsp cornstarch, and 4 tsp water. ✅Sauté carrots and minced ginger about 1-2 minutes until just tender. ✅Add the cabbage and cook another minute. ✅Add the sauce and cook while mixing until sauce starts to thicken, about 2-3 minutes. ✅Add tofu and noodles and mix. Serve. .
