SEAFOOD SUNDAY with some dairy free cashew Mac and “cheese.” This meal hit the spot today. Had a fun night last night at my best friend’s Christmas party…buuuut I’m dragging a bit today! Came home and did some work this morning and then made this delicious bowl! Recipe below. Now I’m cutting up with some hot cocoa and Netflix and finishing emails. ❤️How was your weekend?
Deets: Shrimp seasoned with chili powder and salt and seared in a little coconut oil and bone broth. Greens, tomatoes, avocado and this Mac and cheese made with @eatbanza. Sauce:
4 cups of water (or broth), 1 large potato peeled and diced, 2 large carrots peeled and chopped, 1/2 chopped onion, 1/2 cup raw cashews
1/4 cup whole fat coconut milk, Juice from half of a lemon, 2 tablespoons nutritional yeast, 1/2 teaspoon salt (or more to taste), 1/2 tsp black pepper, 1/2 teaspoon garlic powder. In a large pot boil about 4 cups of water (or broth if you prefer). Boil the veggies And cashews in the water for about 10-15 mins until soft. Save 3/4 cup of the water from veggies once they are done. Remove veggies and cashews from water and place in a blender with the rest of ingredients and the saved water. Blend until smooth. Pour over pasta!
