?Smoky Bean Burgers+my on-repeat crinkle cucumbers ?+garlicky kale+local grape tomatoes+hemp seeds+sesame seeds+pine nuts+avocado…with store bought @sirkensingtons vegan mayo. ?Recipe Smoky bean burger: Mix 2 tbsp ground flax with 3-1/2 tbsp warm water (flax egg). Let sit 5 minutes. In food processor, pulse 1-15oz can drained adzuki or black beans until partly mashed with some whole beans remaining. Combine in a large bowl: mashed beans, flax egg, 1 finely diced red onion, 1 large carrot (grated), a handful spinach leaves (chopped), 1/4 cup cilantro (chopped), 1 tbsp tahini, squeeze of fresh lime, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp ground cumin, 1/2-1 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add (gluten-free) oat flour until sticky enough to form patties (about 3/4 cups). Form patties using ice-cream scoop for measuring. Bake on parchment-lined baking sheet at 375F about 25 minutes, flipping half way.
