For snacks, I generally try to get two food groups – for the snack sized chia pudding, I have a fat (chia) and a carb (fruit). .⠀

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 2 tablespoons cocoa powder
  • 2 tablespoons peanut butter
  • 1-2 tablespoons maple syrup or agave syrup

Instructions:

  1. In a bowl, combine chia seeds, coconut milk, cocoa powder, peanut butter, and maple syrup.
