“SPANAKOPITA” aka CHEESY SPINACH PIE QUESADILLAS and CREAMY DILL KETCHUP DIP! Because 15 minute meals are my jam ? These babies were inspired by my mom’s spinach pie recipe growing up…they can be made dairy free if you’d prefer! I have made them with dairy free cheese and regular. This dip was a quick one I made and it goes well, but they are good with a tzatziki too! Made these for dinner last night because I needed something quick and they were BOMB! Happy Tuesday loves! Deets: combine 1/4 cup feta (or vegan feta, 1/4 cup Parmesan (or vegan Parmesan), 1 egg, salt/pepper, 1 teaspoon coconut aminos and 1 tablespoon chopped dill in a bowl. Sauté 1/4 chopped onion and 1 minced clove of garlic in 2 teaspoons oil on medium high until onions are soft, then add 6 cups of chopped spinach and allow spinach to wilt. Put spinach mixture in a bowl and drain of excess liquid, then add the spinach mixture to the cheese mixture. Heat cast iron pan on medium high and spray with oil. Place four @sietefoods almond flour tortillas (cut in half) on the pan and divide mixture amongst four of the halved tortillas. After about two minutes, place the empty half tortillas on top of the spinach and press down lightly. Allow to cook for another minute. Remove, cut up and enjoy! Sauce: 2 tablespoons Greek yogurt (dairy free or regular), 2 tablespoons organic ketchup, a squeeze of lemon, salt/pepper to taste, fresh chopped dill).
