Starting the week with this vegetarian salad bowl of quinoa & bulgur, peas, courgettes, cherry ?, lambs lettuce and pumpkin seeds. I enjoyed this with a simple vinaigrette that I made by combining:

✨3 tablespoons extra virgin olive oil
✨1 tbsp white wine vinegar
✨½ tsp Dijon mustard ✨½ tsp Agave nectar {or honey}
✨Pinch of salt, to taste

I selected vegetables that are easy on my gut. But you can always use other veggies like broccoli, cauliflower or kale, and you can swap the eggs with tofu, tempeh or any other beans to keep it vegan. ~
