Sunday vegan TAQUITOS! Happy Sunday lovelies! It’s a bit dreary here today. I had tacos last night at my brothers and I guess I wanted to continue the Mexican trend. Sooooo I made some veggie Taquitos! They were super easy to make and delicious!!! I used @sietefoods Almond flour tortillas, stuffed with roasted sweet potatoes, mushrooms, roasted peppers, sautéed spinach and @miyokos_kitchen Vegan mozzarella and crisped them up in coconut oil. Paired these babies with some fried plantains and my avocado crema. I’m posting the recipe for the crema below since some of you asked for it.

Avocado crema: one ripe avocado, a tablespoon coconut cream, 1/4 cup Cilantro, tablespoon of lime juice and salt to taste. Process in food processor or blend in a blender!
