SWEET and SAVORY: CINNAMON CHIPOTLE CAULIFLOWER GNOCCHI WITH A PUMPKIN “CHEESECAKE” DIP AND A LOADED OMELET! This was my lunch the other day and it was BOMB! You HAVE TO TRY these gnocchi and dip! It’s like fall bliss With a little spice ? I l used @thesolacompany sweetener to sweeten the dip and the gnocchi, which I love because it’s a blend of different low calorie sweeteners and tastes amazing (even my boyfriend who dislikes the taste of alternative sweeteners didn’t know the difference ?) I air fried the gnocchi but you could bake them too! Super crispy on the outside and pillowy on the inside. The best sweet and savory, which is always my top choice for meals! I literally have been eating this dip on everything and plan to make a new batch soon, because it taste like dessert!

Deets: one bag of Trader Joe’s Cauliflower gnocchi tossed in 2 teaspoons of coconut oil, and seasoned with salt, @thesolacompany sweetener, cinnamon and chipotle powder. Air fried for about 10 minutes on 390 (I shake it halfway). If you bake, then bake on 400 for about 20 mins. DIP: 1/4 cup dairy free Greek style (or dairy) yogurt, 3 tablespoons cashew butter, 1/2 teaspoon vanilla, 2 tablespoons pumpkin, 2-3 tablespoons @thesolacompany Sweetener, 1/2 teaspoon pumpkin pie spice, squeeze of lemon, pinch of salt. Served with 2 egg omelet stuffed with sautéed greens, brussels, mushrooms and red onion. •
