?Sweet Potato Pinto Patties?Happy Thursday friends.
✅recipe: Toss 2-1/2 cups cut sweet potato (3/4-inch cubes) in olive oil to coat. Add a generous pinch of salt and roast at 400F on lined baking sheet until fork tender. (Or you can sauté the sweet potato in a large skillet until tender.) Mash the cooked sweet potato with a fork or potato masher. Set aside. ✅Mash fully 3/4 cup drained pinto beans. Set aside.✅In a large skillet, cook 1/2 large diced red onion and 1 small diced green bell pepper in a little olive oil (or broth) for about 2 minutes, or until just starts to soften. Mix in 3/4 tsp smoked paprika, 1 tsp chili powder, 3/4 garlic powder, 1 tsp oregano, 3/4 tsp cumin, a generous pinch of salt and remove from heat.✅ Transfer the cooked onion mixture to a large bowl with the mashed sweet potato, mashed pinto beans, 1 cup drained whole pinto beans, 1/2 cup oat flour. ✅Use your hands to incorporate all the ingredients. Add salt to taste. Let the burger mixture sit for 15 minutes. ✅Use 1/3 cup measurement to form the patties. (Mixture should make about 8.) ✅Bake on a lined baking sheet at 375F for 15 minutes. Flip them over and bake for another 10-15 minutes until firm and crispy on the outside. (Or you can pan fry the patties.)
