SWEET POTATO SATURDAY ? Happy weekend all!! Thoroughly enjoying my morning getting some things accomplished, heading to a lobster bake later. Sharing these sweet potato toasts three ways! I made this delicious CHIMICHURRI the other day with @bertolli_us organic olive oil…posting recipe below because it came out FANTASTIC and paired so well with some eggs ❤️ I’m super picky about my olive oil, and I am so excited about this organic olive oil from @bertolli_us, literally been using it for everything lately! I’m off to enjoy the sunshine this afternoon and seeing a friend tonight. Happy weekend!

Deets: sweet potato toasts (sliced 1/3 inch and baked on 400 for 30 mins, flipping halfway).1️⃣Mashed strawberries, avocado, hemp seeds, tahini and micro greens 2️⃣ homemade coconut yogurt, berries, granola, cashew butter 3️⃣ Chimichurri, arugula, soft boiled egg. Chimichurri: 2 bunches of parsley (stems removed)—can sub one bunch of cilantro, 2 cloves garlic, 2 teaspoons red pepper flakes, 2 tablespoons apple cider vinegar, 1 tablespoon lemon juice, 1 teaspoon salt, 1/2 teaspoon pepper, 1/2 cup @bertolli_us organic olive oil. Process in food processor until smooth. •
