TEN MINUTE SHRIMP QUESADILLAS with SPINACH, SUN DRIED TOMATO AND GOUDA! These were seriously the BEST quesadillas I’ve ever made. My boyfriend (who is a hard critic) gave these babies a TEN! Served these up with a creamy sweet chili sauce which paired well. Made these last night for dinner and they hit the spot. It’s been a crazy week, as the holiday weeks usually are! Got to the chiropractor today along with a couple other appointments. Now back in the kitchen! Hope you’re all having a fabulous Tuesday. •

Deets: 2 almond flour tortillas (I used @sietefoods) heated over medium high in a pan sprayed with coconut oil. (I cut them in half first). Add some dairy free gouda, sautéed spinach and onion, cooked shrimp (I used leftover that I sautéed the other day), and sun dried tomatoes. Allow the cheese to melt, then folded them over and cut in half. Served with dip made with sour cream (I used dairy free) and some sweet chili to taste. •
