Thai Tuesday: How is everyone’s day going? It seems like all my days are mixed up!
Happy THAI Tuesday, everyone! How are you all doing today? Personally, I’ve been feeling a bit out of sorts ever since the holiday last week. But, I decided to shake things up by adding some Thai-inspired flavor to my day. For lunch, I whipped up a delicious Pad Thai salad that hit the spot just right!
I used some fresh arugula from @iloveorganicgirl, spiralized zucchini, chopped mini peppers, red cabbage, minced red onion, sautéed mushrooms, roasted chicken, cilantro, and chopped cashew pieces to create a hearty and flavorful salad. And let me tell you, the star of the show was definitely the spicy cashew dressing I whipped up using @georgiagrinders cashew butter, @nutiva coconut oil, lime juice, sriracha sauce, coconut aminos, red pepper flakes, and unsweetened almond milk. It was absolutely BOMB!
As I dig into my tasty creation, I’m already looking forward to a wonderful afternoon ahead. I’ve got some business-related stuff to take care of at the town Hall, but I’m feeling energized and ready to tackle anything that comes my way.
