Looking for a nutrient-packed, delicious meal that fuels your body and satisfies your taste buds? This vibrant bowl has it all—fresh greens, hearty veggies, lean protein, and a creamy, collagen-infused sauce that ties everything together beautifully!


🌿 Ingredients

Base & Veggies:

✔ 2 cups fresh baby spinach
✔ ½ cup shredded red cabbage
✔ ½ cup cherry tomatoes, halved
✔ ½ cup sautéed mushrooms
✔ 1 cup spaghetti squash, cooked

Protein:

✔ 150g roasted chipotle chicken, sliced

Toppings:

✔ ½ avocado, sliced

Creamy Yogurt-Tahini-Collagen Sauce:

✔ 2 tbsp almond milk yogurt
✔ 1 tbsp tahini
✔ 1 tsp coconut aminos
✔ 1 tsp lemon juice
✔ 1 scoop collagen peptides


👩‍🍳 Instructions

1️⃣ Prepare the Base & Veggies

  1. Wash and chop all vegetables as needed.
  2. Sauté the mushrooms in a non-stick pan until tender.
  3. Roast or cook spaghetti squash if not already prepared.

2️⃣ Cook the Chipotle Chicken

  1. Season chicken with chipotle powder, garlic, paprika, salt, and pepper.
  2. Roast in the oven at 200°C (400°F) for 20-25 minutes or until fully cooked.

3️⃣ Make the Creamy Sauce

  1. Whisk together almond milk yogurt, tahini, coconut aminos, lemon juice, and collagen peptides until smooth.
  2. Adjust thickness with a splash of water if needed.

4️⃣ Assemble the Bowl

  1. Place baby spinach at the bottom of your bowl.
  2. Layer on red cabbage, tomatoes, mushrooms, and spaghetti squash.
  3. Add roasted chipotle chicken and sliced avocado.
  4. Drizzle the yogurt-tahini-collagen sauce generously over the top.
