The Perfect Buddha Salad Bowl for a Midweek Lunch! Just One More Client to Go!
Today, I indulged in a simple and nourishing Buddha salad bowl for lunch to break up the monotony of the week. As I prepare to head to Orlando for the Blog Her conference tomorrow, I’ve been reflecting on the importance of taking a moment to slow down and be mindful in our daily lives. Lately, I’ve noticed that I’ve been constantly on the go, and it’s time for a change.
For this vibrant and wholesome bowl, I started with a bed of fresh baby spinach from @iloveorganicgirl and added in some red cabbage, juicy tomatoes, sautéed mushrooms, a generous portion of spaghetti squash, and tender roasted chipotle chicken. To top it all off, I sliced up a creamy avocado and drizzled on a decadent yogurt-tahini-collagen sauce made with @kitehillfoods almond milk yogurt, @soomfoods tahini, a splash of coconut aminos, a squeeze of lemon, and a scoop of @furtherfood collagen peptides.
As I took my time to assemble this beautiful bowl, I couldn’t help but appreciate the opportunity to slow down and savor each ingredient. The flavors came together harmoniously, and I felt a sense of calm wash over me. With the sun shining and the promise of a relaxing evening ahead, I couldn’t help but feel grateful for the little moments that bring joy to my day.
