The struggle was real with these plantain pancakes. I went into making them feeling very sure of myself. I thought it would just be a case of, plantain, a little bit of flour, flax egg, milk and I’ll be good but um… it didn’t work out like that.

The first pancake I made was a sticky mess ?. So I had to adjust the amount of flour… second pancake was just just as terrible ?. Anyway I had to keep adjusting until I eventually got this ? Unfortunately, I have no recipe because I have no idea how much of each thing I eventually used ? Once I work out a recipe that makes sense, I’ll be sure to share.
