The weather has been fantastic today – not too hot, not too cold. I love it when I can go outdoors with nothing but a cardigan. I’m so over coat life ?

I made this warmish pasta salad for lunch today. I used wholewheat pasta with home-made roasted peppers, diced ?, cherry ?, diced ?, roasted chickpeas (coat in paprika, cumin, some drizzle and coconut oil and roast in the oven) and some rocket (arugula). For the dressing, I mixed plain unsweetened soya yoghurt with tahini, lemon juice , black pepper and a small drizzle of honey. Very light and refreshing, perfect for spring ?
