There is just something about a green bowl isn’t there? I enjoyed this one with a sauce made from sriracha and hummus 🌱
It may not be obvious yet, but I haven’t been eating as many legumes as I usually do to give my body a break. I’m still getting as much protein as I need from vegetables and grains mainly supplemented with nuts and tofu.
For those of you thinking about a vegan diet, but worried about protein, I just want you to know that if you don’t like legumes or can’t eat them for whatever reason, you’ll be fine without them 😊
