They say the best recipes come about by accident. Well, this unconventional Thai Green Curry may be a testimony to that. I won’t say this is the best recipe ever, but it was shockingly good. I left calorie counting back in late 2016, and it is something I don’t ever want to do again. I find both calorie counting and macro tracking very stressful. It takes away from the enjoyment of my food. I’m either worried about not eating enough or overeating. I’m happier when I eat according to my appetite. On days when I’m hungry, I like to be free to eat as much as I need to and on days when I’m not so hungry, I’m happy not being under pressure to eat more than I want to, just to hit a specific target. ~
We are all individual so a different strategy may work for you. That said, if you’re not training for a fitness competition, you don’t have to count calories or track macros when eating whole foods plant-based. If you learn to trust that your body knows what it needs, it will reward you back by ensuring you absorb all the nutrients you need to stay healthy. #wholefoodplantbased #eatyourveggies #eatyourcolors
