Toasting PINK to Thursday with these GINGER HONEY BEET hummus toasts I made a while back. One of my favorite hummus recipes to date (see below). Hope you all had a fantastic holiday!!! It’s HOT here, and it isn’t stopping any time soon so give me all the cold foods and I’m good! Topped these @simplekneads_gf toasts with hummus, avocado, arugula, soft boiled @vitalfarms egg, mushrooms, watermelon seeds, vegan ricotta and @beekeepers_naturals honey. Happy Thursday loves!

Hummus:
-one package @lovebeets ginger hummus beets
-one can chickpeas (I like to peel them)
-1/4 cup tahini
-2 tablespoons olive oil
-1 clove garlic -1 teaspoon honey
-1/4 teaspoon fresh ginger
-1/2 teaspoon salt
-1/2 teaspoon pepper
-2 tablespoons water
Blend all ingredients in food processor until smooth. •
