TOASTING to Tuesday with leftovers and meal prep coming in clutch! Happy Tuesday loves. It’s raining here and I had a late start today….but after a good workout came home to throw these babies together. Took about ten minutes, since the only thing I really cooked was the egg. Prepped the taters, spreads, veggies and shrimp ahead of time. Which one would you choose? I hope you all have a lovely day! I have a bunch of work to do this afternoon. •


Deets: 3 slices sweet potato toasts (slice 1/3 inch thick, bake on a cookie sheet for about 30 mins on 400, flip halfway) 1️⃣ Kale cashew basil pesto (two posts back) plus roasted tomatoes and leftover spicy shrimp 2️⃣beet cauliflower spread, avocado, @vitalfarms egg and micro greens (see highlights for soft boil technique) 3️⃣ @kitehillfoods almond milk yogurt, strawberries, @salbachia chocolate chia seeds and @spreadthelove crunchy almond butter. •
