TOASTING to Tuesday with some lunch toasts, because that’s what I was craving today while recipe testing. I got this ENORMOUS sweet potato and decided that the best thing to do with it was make a bunch of toasts yesterday. So today I just had to reheat and top them! ?‍♀️ FYI: strawberries ? + avocado ? and cucumber ? + yogurt ? are both winners…new fave combos. Used @lifewaykefir lactose free kefir with the cucumber and it was delicious with tomatoes, dairy free feta, Tahini and fresh dill. Happy Tuesday all! Which would you choose first?



Deets: 3 slices of sweet potato toast (sliced 1/3 inch thick and dry baked on 450 for about 15-20 minutes flipping halfway). 1️⃣ mashed avocado and strawberries with hemp seeds 2️⃣ arugula, avocado and soft boiled egg 3️⃣ @lifewaykefir plain unsweetened lactose free kefir, cucumber ribbons, tomatoes, pumpkin seeds, fresh dill and tahini. •
