Veggie-packed Chopped Chicken Salad with Dairy-Free Tzatziki Option

Today I was in the mood for a light and refreshing chopped chicken salad with a dairy-free tzatziki dressing. I love indulging in all the delicious vegetables, especially when I have fresh dill, mint, and yogurt on hand. Whether I’m traveling or back in my own kitchen, making a flavorful meal is always a must for me.

In a bowl, I combined some organic baby spinach from @iloveorganicgirl, vibrant red cabbage, juicy tomatoes, roasted red peppers for a kick, creamy avocado, sautéed zucchini in coconut oil from @nutiva, roasted mushrooms, and red onions. To add some protein, I seasoned a chicken breast with Himalayan salt, dried oregano, pepper, and lemon juice, then pan-seared it and chopped it up before tossing it into the salad mix.

– 1/2 cup of plain unsweetened almond milk yogurt from @kitehillfoods
– 1 tablespoon of fresh lemon juice
– 1/4 tsp of Himalayan salt
– Pepper to taste
– 1 tablespoon of chopped fresh dill
– 1/2 tablespoon of minced fresh mint
– 1 minced garlic clove
– Optional: 1 tablespoon of chopped peeled cucumber
– 1.5 tsp of olive oil
– Optional: 1 scoop of collagen from @furtherfood

I love how the combination of flavors in this salad harmonize so well together, creating a satisfying and nutritious meal that is perfect for any time of day. It’s the perfect balance of crunchiness from the veggies, creaminess from the avocado, and zestiness of the chicken and dressing.
