When you just want to eat all the veggies! ? For dinner, I cooked this vegetable Thai green curry with noodles. I used a ready-made Thai green curry paste to speed up the cooking time, but here’s the recipe for the sauce. ✨Most ready-made Thai green curry pastes contain fish sauce, so make sure you read the ingredients before you purchase if you’re vegan. If you’re in the UK, you can purchase vegan Thai curry paste from Tesco.?

Ingredients you’ll need

2 tbsp Thai green curry paste
400ml tin coconut milk
Pinch of palm or brown sugar
100g baby corn ?
1 large carrot?, sliced
100g sugar snap peas
100g broccoli ?
1 small courgette, chopped
1 large green pepper, chopped

✨Heat a non-stick fry pan with a little splash of water or oil, add the curry paste and stir-fry for 1-2 minutes until fragrant. ✨Add the coconut milk and a pinch of sugar and stir well. Bring the mixture to the boil, then turn the heat down and cook on a simmer for 8-10 minutes or until the sauce thickens. ✨Add the carrots first, cook for 2-3 minutes then add the remaining vegetables and continue to cook on a simmer for around 4-5 minutes or until the vegetables are tender. ✨Season with salt and pepper as needed. ✨Serve over noodles, and garnish with chilli flakes, sesame seeds and chopped coriander. #plantbasedfood #plantbaseddiet #veganthai
