Deets: arugula, roasted kabocha, roasted mini peppers, roasted Brussels, hassleback roasted eggplant, 4 ingredient chicken spinach-mushroom meatballs, caraway seeds and drizzled with a mix of @soomfoods Tahini and @victoryhempfoods Hemp oil. •

Meatballs:
1 pound of ground chicken (or turkey)
3 egg whites or one egg
1/2 diced bell pepper
1/2 cup shredded spinach
1 small carton mushrooms minced
Spices (I used @paleopowder Italian blend)
