Who is up for a noodle stir fry???♀ If you are, you’ll love this super simple recipe?. You can whip it up in 15 minutes or less, I kid you not! I’ve cooked it with tahini, but if tahini is not your thing, swap it with peanut, almond or even cashew butter. Ready to do this? Let’s go!

What you’ll need:
?150g whole wheat or rice noodles
?150g stir-fry vegetables (mix of mushrooms, greens & beansprouts)
?100g edamame
?1 large spring onion, finely sliced
?1 large garlic clove, finely minced
?½ teaspoon ground ginger
?2 teaspoons roasted peanuts
?2 teaspoons tahini
?2 teaspoons sweet chilli sauce
?1 teaspoon tamari or soy sauce
?2 teaspoons roasted sesame seeds

{1✨} Place the noodles in a bowl of boiling hot water and allow to sit for 5 minutes until they soften. Gently separate the noodles with a fork, drain and set aside. {2✨} In a small bowl, combine the tahini, tamari, sweet chilli sauce and around 50ml of water to form a smooth sauce then set aside. {3✨} Heat a teaspoon of oil or a splash of water in a large frying pan or wok. Add the the spring onions, garlic, ginger and the vegetable mix into the pan. Stir fry for 3-4 minutes then add the noodles and edamame and continue to toss until the vegetables are cooked. {4✨} Stir in the tahini sauce and toss thoroughly to evenly coat each noodle strand. {5✨}Divide the noodles between two bowls then sprinkle with roasted peanuts and sesame seeds.
