Wild Pizza Wednesday: Indulging in my Pizza Cravings with Some Creative Creations!
Pizza lovers, rejoice! Today was Wild Shrimp Pizza Wednesday and it was absolutely amazing. My cravings led me to experiment with a paleo plantain pizza crust that turned out to be incredibly delicious. Picture this: a crust made with plantains topped with a “cheesy” spread of nutritional yeast, chopped kale, juicy tomatoes, vibrant peppers, creamy avocado, succulent @zayconfresh wild shrimp, and fresh scallions. To give it that extra kick, I drizzled a spicy mixture of @heatandflavor chipotle sauce and coconut aminos over the top. The flavors burst in my mouth and it was truly bomb!

Now, onto the plantain crust recipe:
– 1/2 yellow plantain
– 2 tbsp @nutiva coconut flour
– 1 tbsp @salbachia ground chia (or substitute ground flax)
– 1 egg and 2 egg whites (or 4 egg whites)
To make the crust, preheat your oven to broil. Blend all the crust ingredients until smooth and thick yet spreadable. Grease a cast iron pan with @chosenfoods avocado oil and heat over medium-high heat until hot. Spread the pizza dough batter in the pan and form the crust. Cook on the burner until the edges are done, then broil for about a minute to cook the top. Remove from the oven, add your toppings, and broil for about 5 minutes until it’s cooked to perfection. Take it out, sit down, and indulge in this delicious pizza.
