Who doesn’t love bacon, amiright? It’s the perfect addition to any dish, adding a delicious savory flavor that just can’t be beat. And let me tell you, it took this salad to a whole new level of tasty. Talk about a perfect Hump Day meal!
I started with a base of @organicgirl arugula and baby spinach, then added in some roasted mushrooms, peppers, and tomatoes for a burst of flavor. Sliced red onions and chopped beets added a nice crunch, while the roasted chicken and avocado gave it some extra protein and creaminess. And of course, I couldn’t forget the star of the show – turkey bacon. Crispy, salty, and oh so delicious.
To tie it all together, I whipped up a jalapeño lime yogurt dressing. I combined lime juice, coconut aminos, @heatandflavor green jalapeño hot sauce, and @foragerproject cashew milk yogurt for a creamy, tangy dressing that was the perfect finishing touch. It added just the right amount of kick to the salad, without overpowering the other flavors.
As I sat down to enjoy my meal on this hot and humid day in Boston, I couldn’t help but be grateful for the delicious, fresh ingredients in front of me. It was the perfect way to refuel and recharge before diving back into a busy afternoon of meal prep for my clients. Sure, my non-ac apartment may have been a bit steamy, but the satisfaction of creating something delicious from scratch made it all worth it.
