You know what’s FUN?! EATING the RAINBOW ? especially when It TASTES good ? FYI I have been obsessed with adding berries to my savory bowls (recipe for the guacamole below!)! Happy Monday all!!! I hope you had a great weekend. I had a packed weekend but my heart is full after some great time spent with amazing people. ❤️ All ready missing my step dad who flew back home today. ?This bowl was so simple but oh so satisfying for a busy day I have had today. With using leftover shrimp, PURPLE asparagus and pan fried plantains…this bowl took literally 5 minutes to make. I hope your week is off to an amazing start!!

Deets: arugula, micro greens, pan fried plantains, pan roasted shrimp (I add bone broth too), roasted purple asparagus, strawberries and a quick guacamole! Guacamole: 2 ripe avocados, 1/2 red onion minced plus a tablespoon of grated onion, 1 garlic clove minced, 1/2 teaspoon Himalayan salt, 1-2 tablespoons lime juice, 1/2 teaspoon ground cumin, a couple dashes of coconut aminos, 1/4 cup cilantro minced, 1/4 teaspoon red pepper flakes. •
