You may already know that ? herbs and spices add a wonderful flavour to your dishes, but do you know that they are also sources of essential nutrients in your diet? Some of them provide vital amino acids that are usually low in plant foods while others boost your intake of certain minerals and vitamins.

Herbs including basil, coriander (cilantro), parsley, oregano etc. are most nutritious when you eat them fresh. Parsley is one of my favourites. I cook with it in as many dishes as I can, and as you may have already noticed, I frequently use it as a garnish in most of my recipes. Only three tablespoons of chopped parsley provides up to 22% of the recommended daily intake (RDI) of vitamin C, 3% RDI of iron, 16% RDI of vitamin A, and 205% RDI of vitamin K. How awesome is that??
