Black Bean & Spinach Quesadillas 🖤💚🧡What you need: 12 6in corn tortillas , 1 can of black beans drained and rinsed, 1/2 cup chopped onion, 5 oz of spinach, 1 tbls of cumin, salt & pepper to taste, 1 1/2 cups of vegan nacho cheese, salsa, and sour cream:
1️⃣ Melt some butter in large sauté pan on medium, add onion and cook until soft and golden
2️⃣ Add spinach and cook till wilted, then add beans, cumin, salt & pepper. Set aside
3️⃣ Using a non stick pan place tortilla on pan using low/med flame, toast till you see tortilla bubble up
4️⃣Spread 2 tlbs of cheese sauce on to tortilla in pan using a wooden spoon
5️⃣ Add some bean filling to half the tortilla and then fold the other half on top, press down with spatula- it should sizzle. Cook 3-4 min on each side. Repeat till you had enough 😋Enjoy!!! Top with salsa, sour cream, and always more cheese 🧡
