Craving something warming, nourishing and most importantly, easy? ✨ This quick + easy chickpea tikka masala has all the grounding flavours from warming spices while offering a hearty dose of plant-based protein 🌿 No chopping required, and a super inexpensive meal using all the canned goods you probably already have on hand 🙌🏼.
In a large pan, saute 1 diced yellow onion, 2 tbsp minced ginger + 3 cloves of garlic until onion becomes translucent. Add 2 tsp each of garam masala, cumin, smoked paprika and coriander and 1 tsp of turmeric. Saute together with the onion, garlic and ginger mixture until fragrant (about 2 minutes). Next, add 1 can of diced tomatoes, 1 can of coconut milk, 1 can (156mL) of tomato paste, and 1 can of chickpeas, drained and rinsed well. Season with salt (about 1/4) and let come to a simmer. Let simmer for about 15 minutes, stirring occasionally. Once done, garnish with the juice of 1/2 lemon and 2 handfuls of kale or spinach (optional). Serve with brown rice or grain of your choice and enjoy! 💛
