CREAMY CASHEW-FREE VEGAN ALFREDO ✨ I first shared this recipe back in February last year (I can’t believe it’s been that long!) and it still remains a staple in my household, especially in the chillier months 🍂 Incredibly creamy and indulgent-tasting but SO nutritious 🙌🏼.
To make 👇🏼(serves 2):
In a high-speed blender, blend together 1/2 cup sunflower seeds, 1/2 cup plant-based milk (+ more if needed), 1 clove of garlic, 3 tbsp of nutritional yeast, 1/4 tsp salt, 1/8 tsp pepper + 1/2 tsp apple cider vinegar. Blend until completely smooth. Serve with pasta of your choice and whatever add-ins you like! I usually go for frozen broccoli, sautéed red onions and edamame. Enjoy! 💛
