Creamy Chick’n & Gnocchi Soup: yup, that’s right. So there are a lot of recipes out there that recreate the very popular Olive Garden chicken & gnocchi soup. This one is special because not only is it yummy, but it’s Vegan ??✌?hope you like it & Happy Sunday???? Recipe ➡️➡️➡️What you need: The Cashew Cream: 1 cup cashews, 1 cup vegan chicken flavored broth, juice of 1/2 lemon For the soup: 2 tbl butter, 1 medium onion diced, 1 1/2 cups each of celery & carrots chopped, 3 garlic cloves minced, 1 can jackfruit rinsed/dried then shredded, 1 tsp dried thyme, 1 tsp dried parsley, 6 cups vegan chicken flavored broth, salt/pepper to taste, 2 bay leaves, 1 lb of gnocchi (sub pasta of choice) , juice of 1/2 lemon, baby spinach (optional), fresh parsley (optional) What you do:
1️⃣ In a high speed blender combine all ingredients for cashew cream, blend till smooth. If using a food processor/regular blender, soak cashews in water 2-3 hrs to soften before blending.
2️⃣ On stovetop in large pot, melt butter on medium, add carrots/onions/celery/garlic. Cook until tender, about 6-8 min
3️⃣ Stir in the broth, jackfruit & spices. Bring to a boil, then reduce heat to simmer for 20 minutes.
4️⃣Add gnocchi ,cook 6-8 min or according to box directions. Then take out bay leaves.
5️⃣Add cashew cream, cook until heated through. Turn off heat.
6️⃣Add lemon juice & greens (optional), adjust seasonings
7️⃣Top with fresh herbs. I topped mine with chopped parsley & added crushed red pepper. Enjoy!!
