Creamy vegan mac + cheese with garlic roasted broccoli and smokey mushrooms ✨ I find it hard to believe that there’s anything that can top a good vegan mac + cheese, other than adding these delicious mushrooms and broccoli to it ??.

To make ??:
Dice and boil 2 large carrots until tender. Meanwhile, chop a head of broccoli, toss in garlic powder and roast for 15 mins at 450 F. Once carrots are tender, place in blender with 1/2 cup nutritional yeast, 1/3 cup cashews, 1 tsp Dijon mustard, a splash of apple cider vinegar, the juice of 1 lemon, 1 tsp miso paste, 1 tsp tomato paste, 1 tsp each of garlic powder and onion powder, 1/2 cup plant-based milk and 1/2 tsp each of salt + pepper. Blend together until smooth (makes about 2 cups). Cook pasta as per package instructions. Meanwhile, sauté sliced mushrooms in 1/2 tsp liquid smoke (optional), 1/2 tsp smoked paprika + 1/2 tsp soy sauce. Once all components are done, combine together and enjoy! ✨
