Does it still count as meal prep if you eat half the food while you’re making it…? 🙈 Asking for a friend 👀 This sundried tomato hummus is a weekly staple in my meal prep because 1) It’s delicious 2) It’s EASY to make 3) It can be eaten alone or spread on sandwiches, bowls or salads ✨ Need I say more?! 😍.
To make 👇🏼:
Drain and rinse 1 can of chickpeas, then add to a food processor or high speed blender with the juice of 1 lemon, 1 large clove of garlic, 1/4 cup sundried tomatoes, 3 tbsp tahini, 1/4 tsp salt, 2 tbsp of oil from the sundried tomatoes + 2 tbsp of water (or more as needed). Blend until smoooth and enjoy 💛
