Does the fact that it’s fall make it socially acceptable to eat soup everyday? 🍂 Because that’s kind of the way things are going around here 😍 The other day I was craving something super simple, warming and nutritious and threw together this soup + some homemade tea biscuits (recipe by @minimalistbaker- so easy!) ✨ There’s no rules with this soup, so use whatever veggies and spices you feel like! 🌿.
To make 👇🏼:
Dice 1 onion, 4 cloves of garlic + a 1 inch thumb of ginger. Add to a large soup pot and sauté until the onion is translucent. Meanwhile, chop 1 large sweet potato, 3 stalks of celery, 1 bell pepper, + 3 carrots. Add to the pot along with 1 can of diced tomatoes, 1 drained and rinsed can of chickpeas, 5 cups of vegetable stock, 1 cup of plant based milk of choice (optional), 1 tbsp smoked paprika, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp dried parsley + salt and pepper to taste. Cook on medium heat for 20-30 minutes, until sweet potatoes can be easily pierced with a fork. Add 3 handfuls of kale or other leafy greens and enjoy! 💛
