Don’t like salads? TRY THIS.
You will fall in love with salads after this AVO KALE CHICKPEA SMOKEY TOFU SALAD!
Iv been on a kale kick recently and can’t stop ? tag a friend who needs more salads in their life or someone who needs to learn to LOVE kale.
RECIPE:
1 bunch kale
1 avocado
1/2 cup Sauerkraut
1/4 cup water
1/4 cup hemp seeds
3 tbsp nutritional yeast
1/4 tsp salt
1/4 tsp pepper
Optional add ins:
Roasted Chickpeas :
1 Can chickpeas
1 tbsp paprika
1/2 tbsp garlic powder
1 tsp salt
Smokey baked tofu :
1/2 container high protein extra firm tofu
2 tbsp soy sauce
1 tbsp maple syrup
1/2 tsp Liquid smoke
1 tbsp water
In a bowl mash avocado, kraut, water, hemp seeds, nutritional yeast, salt and pepper. Mix until well combined. Add to chopped kale and USE YOUR HANDS to massage! Massage for 2 mins until each kale leaf is coated. Top off with a sprinkle of hemp seeds & nutritional yeast!
For tofu:
In a small bowl combine all ingredients minus the tofu and whisk.In a pan combine cubed tofu and mixture and cook for 2-4 minutes or until browned.
For chickpeas:
Preheat oven to 400 degrees F.
Line a Baking sheet with parchment paper.
Rinse the chickpeas and add to baking sheet. Add seasonings & salt, mix and bake for 15-20 minutes or until crunchy!
