Dreaming of this lemon + garlic gnocchi as I survive off apples + snack bars on my stopover back to Toronto ✨ There’s something about traveling that makes me SO hungry, and even though I always bring extra snacks of fruit, snack bars + nuts I always need a nourishing meal when I get to my destination 🙌🏼 Definitely going to be making this gnocchi later- it takes just 15 minutes to whip up and is SO delicious 🌿.
To make 👇🏼:
Sauté 2-3 cloves of garlic with 1 tsp olive oil in pan on medium heat until fragrant. Add 1 cup of sliced mushrooms and 3 stems of kale, chopped. Pour 1/2 cup of vegetable stock into the pan, and let simmer for 3 minutes. Cook gnocchi per package instructions, and save 2 tbsp of cooking liquid from the gnocchi. Add to pan, along with drained gnocchi. Add 1/2 lemon, juiced, 5-10 sliced olives, and a pinch of salt + pepper + nutritional yeast. Sauté to combine and adjust flavors as preferred. Enjoy 💛
