EASY BBQ TOFU SKEWERS ✨ BBQ season isn’t over yet, and these BBQ tofu skewers with peanut lime sauce are one of my favorite meals to make on the barbecue. Quick, easy and so delicious- the perfect Sunday night meal, and you may even have leftovers for the week, too! ✨.

To make the tofu skewers ??:
Press extra firm tofu with a clean cloth to remove excess water. Cut into cubes, and place in a bowl to marinate with 2 tbsp BBQ sauce, 1 tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tbsp soy sauce + 1/2 tbsp maple syrup whisked together. Marinate the tofu for at least 30 mins. Meanwhile, cook quinoa as per package instructions. Once tofu has marinated, slide onto skewers with desired veggies (I used red onion, red pepper + zucchini) ? BBQ (or broil in the oven) on each side for about 3 minutes until crispy. Drizzle with my peanut lime sauce (recipe in my free ebook- link in my bio). Enjoy! ?
