Ingredients:
Chili:
4 cups diced canned tomatoes 1 can cooked black beans
1 cup cooked brown rice (or vegan beef crumbles)
1 can cooked kidney beans
2 cups corn
1 white onion, finely chopped 2 cups mushrooms chopped
3 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon cinnamon
1 tsp sea salt
1 tsp ground pepper
Fries:
4 sweet potatoes
Salt
Pepper
Garlic powder
Vegan Sour cream:
1 cup raw soaked cashews
1/2 cup water
3 tbsp nutritional yeast
1 tsp white vinegar
Juice of 1 lemon
1 tsp salt
1/2 tsp pepper
Extra toppings:
Avo
Method:
– Fries –
Cut sweet potatoes into fry shape and season with salt, pepper and garlic powder. Bake in preheated oven at 400 degrees F for 30-35 minutes. – Chili –
1. In a large pot over medium heat, sauté onion and garlic for two minutes. Then add in mushrooms and cook for 4 minutes
2. Add all the spices and sauté for 2 minutes.
3. Add in the crushed tomatoes,black beans, kidney beans, corn, brown rice, salt, and pepper. Stir to combine, cover with a lid, and simmer for 20 minutes. Serve hot, top with sprouts or green onion.
– Cashew sour cream –
Blend all ingredients in a high speed blender until smooth and creamy!
