Have you ever had the experience where one minute you’re totally fine and healthy, and the next you’re throat is scratchy, you’re sneezing non-stop and you can’t remember what it feels like to breath out of both nostrils? 👀 That’s me today 🤧 .
Luckily I have this warming sweet potato curry soup to make me feel better ✨ The comforting mixture of creamy sweet potato + spicy ginger + warming curry makes this the ultimate cold-battling soup 🍂.
To make 👇🏼:
Sautée 1 onion, 3 cloves of garlic + 1 inch thumb of chopped ginger until translucent. Next, add 1 cubed sweet potato, 5 medium diced carrots, 1/2 cup of frozen edamame (trust me), 2.5 tbsp curry powder, 4 cups of veggie broth, 1 tsp turmeric + salt and pepper to taste. Bring to a boil, then simmer for 20 minutes until potatoes are fork tender. Transfer to a blender and blend on high until perfectly creamy + smooth (optional: add 2 tsp of miso paste for umami flavour). Garnish with lots of lime juice + serve over brown rice or on its own.
