I posted this picture of my BBQ tofu skewers with a peanut lime sauce on my stories a few nights ago and got SO MANY messages about how to make them, so I thought I’d share! ? These are so simple, take next to no time to make, and are delicious! I love them for when I’m craving something quick, simple and nutritious ✨.

To make the tofu skewers ??:
Press extra firm tofu with a clean cloth to remove excess water. Cut into cubes, and place in a bowl to marinate with 2 tbsp BBQ sauce, 1 tbsp olive oil, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tbsp soy sauce + 1/2 tbsp maple syrup whisked together. Marinate the tofu for at least 30 mins. Meanwhile, cook quinoa as per package instructions. Once tofu has marinated, slide onto skewers with desired veggies (I used red onion, red pepper + zucchini) ? BBQ (or broil in the oven) on each side for about 3 minutes until crispy.

To make peanut-lime sauce ??:
Then, whisk together 2 tbsp of peanut butter, 1/2 tbsp maple syrup, 1/2 tsp ginger powder + 1/2 lime, juiced. Serve drizzled over the tofu skewers + quinoa and enjoy! ??
