If you haven’t noticed yet I’m alllllll about the buddha bowls at lunch ?? basically I just throw together whatever leftovers I have in the fridge; this one has roasted chickpeas and sweet potato, massaged kale, smoky tofu (recipe a few posts down!), tahini lemon dressing, and a cabbage slaw ? To make the slaw ??
1. Thinly chop 4 cups of purple cabbage
2. Massage with 3 tsp of lime juice and 1/2 tsp of salt in a large bowl for about 3 minutes, until the cabbage has deepened in colour and starts to wilt
3. Add other add-ins of your choice! I really like 1/2 chopped jalapeño for some heat, but cilantro or parsley would also be delicious. You can also add more salt or lime here if you like.
4. Store in a container and keep in the fridge for up to 5 days. Enjoy! ❤️
